¦Á- acetolactate decarboxylase is made from microbion through liquid deep fermentation and extraction technique.
This product can be used for the fermentation of beer industry. It can prevent the formation of diacetyl by catalyzing ¦Á-acetolactic acid decarboxylates into 3-hydroxy-2-butanone (CH3CHOH•CO•CH3), so the maturation period of fermentation can be shortened greatly or even passed over. This product is helpful to shorten or even pass over the reducing period of diacetyl, so as to increase the output of beer. At the same time, it can decrease the content of higher alcohols and higher lipin generated due to high-temperature metabolism, so as to improve the beer's flavor; This product can also decrease the content of ¦Á-acetolactic acid in beer to avoid excess diacetyl, so as to ensure the stability of beer's quality.
